Turkey as a Healthy Alternative

Today the emphasis is often on making healthy choices and substituting healthy alternatives such as turkey or lamb in traditional recipes in place of the red meats. The great thing about turkey is that it,like chicken, can be prepared in so many different and tasty ways.

Today I’d like to share my recipes for a delicious turkey burger patty that can be served as a sandwich or as an entree. I hope you like this one as it is a recipe which can be varied in lots of ways and given international flavors with the addition of different spices.

The second dish I wish to share with you is a lovely turkey noodle soup using turkey wings which can be purchased cheap at your local market. This one really is good on a cold day!

Turkey Burgers

Let’s make some good turkey burgers! First the ingredients:

Delicious Turkey Burgers andĀ a good way to sneak some extra veggies into your family’s diet!

  • 1-2 packages extra lean ground turkey
  • 2 eggs
  • packaged bread crumbs
  • 1small can vegetable soup pureed
  • 1/2 cup green bell pepper minced
  • 1/2 cup onion minced
  • 1 tsp curry powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 more eggs beaten thoroughly
  • panko Japanese bread crumbs

Combine meat, eggs and pureed soup . Mix well. It’s easiest to do with your very own hands! Add other ingredients, some like less some may like more!

Slowly add bread crumbs to thicken the mix. Form into individual burger patties and dip into egg mixture and dredge through panko to coat thoroughly. Place a wire rack on a baking sheet and then put patties on rack. Bake at 400 F until internal temp gets to 160F. Approximately 20 minutes but keep an eye on it as ovens vary. Take out of oven and let rest for 10 -15 minutes.

Serving suggestions:
This is delicious on a kaiser roll or as an entree with rice and stir-fry vegetables.For a burger meal why not try some delicious sweet potato french fries.

A delicious variation on Rice Pilaf

  • 8 tbsp. butter
  • 2 c. orzo (a pasta)
  • 3 c. long grain rice
  • 1 tsp. salt
  • 2 tsp. ground black pepper
  • 1/2 cup chopped broccoli
  • 1/4 cup diced carrot
  • 10 c. chicken broth

Melt butter over medium heat in large saucepan. Stir in the orzo until golden brown. Add the rice, salt and pepper. Add chicken broth to rice mixture. Turn to high heat until rice comes to a boil, cover and turn heat to low, add vegetables,cover and simmer 20 minutes or until rice is fluffy and all liquid is absorbed. Let the pilaf sit 10 minutes off heat before serving.

Serves 10.

Easy Turkey Noodle Soup

For this recipe I use about 2 pounds of turkey wings. These are a good choice because they will provide plenty of meat for the soup and a very rich broth as well.

The other ingredients:

  • 1 large onion diced
  • 1 cup diced celery
  • 1 cup diced carrot
  • 2 tsp chopped sage
  • 1 bay leaf
  • 2 tsp salt (Kosher please)
  • 1/2 tsp black pepper
  • 1/4 cup diced red bell pepper
  • 3 T olive oil
  • 1/2 tsp crushed garlic
  • small bag egg noodles

Take a large stock pot add the olive oil and heat till the oil shimmers. Sear the turkey wings in the oil until brown on both sides and remove from pan. Add 2 tsp more oil and saute onions, celery, peppers, and garlic till onions are translucent. Add remaining ingredients including the seared wings and pour in 2 quarts of water. Bring it all to a boil and then reduce heat and cook covered over medium low heat for 1 hour.

Remove the wings from the pot, strip meat from bones and return meat to pot. Put in egg noodles ( it may not take the whole bag dependingĀ upon whether you like lots of noodles). Cook over medium high heat until noodles are tender. Make a slurry of cornstarch and water and add to soup. Stir until broth has thickened a little. Now we can eat!
